Muhammad Farms Kitchen Recipes

We have decided to put up a few recipes to help customers utilize the products grown here at Muhammad Farms and by other Black farmers.  As the season progresses and new crops become available, we will add more recipes.

Bookmarks: Whole Wheat, Carrots, Squash

Whole Wheat Doughnuts (Donuts)

3 cups Unbleached Flour

1 cup Muhammad Farms Whole Wheat Flour (sifted)

4 tsp Non-aluminum Baking Powder

1/4 tsp Soda

3/4 tsp Salt

1 tsp Nutmeg

1/4 tsp Cloves (ground)

2 Eggs

1 cup Sugar

1/4 cup Corn Oil

1 1/4 cups Buttermilk

Combine eggs, sugar, shortening and buttermilk.  Sift all dry ingredient into your liquid ingredients.  Mix well.  On a floured surface roll dough out to 1/4 inch thickness.  Dipping doughnut cutter in flour to prevent sticking, cut doughnuts, saving holes.  Heat oil for frying to 375 degrees F.  It only takes a few seconds to brown. Turn them once with a fork.  Remove and drain on paper towels.  Repeat this whit the doughnut holes. Cool. Put 10X sugar in a bag and shake to coat. Makes 2 dozen.


Whole Wheat Flat Bread

1 cup Muhammad Farms Whole Wheat Flour

1 1/2 cups Unbleached Flour

2/3 cup Cream of Wheat

1/4 cup Corn Oil

2 Tbs Sugar

1 tsp Baking Powder

1/2 Salt

1 cup Buttermilk

Mix flours, cream of wheat, oil, sugar, baking powder and salt. Stir in enough milk to make a stiff dough.  Knead the dough for 30 seconds.  Divide dough into 4 balls. Roll out dough to 1/4 inch thick circles.

Heat oven to 350 degrees.  Place flat bread on ungreased cookie sheet.  Bake 8-10 minutes until light brown.  Cool on a rack.  After bread has cooled, slice into desired pieces.  They can also be sliced in half and opened up for pita pockets.



Glazed Carrots

3 cups Sliced Carrots

2 Tbsp Butter

1/2 cup Brown Sugar

1 tsp Cinnamon

1/4 tsp Salt

Cook carrots in water till tender. Drain carrots. In a pan melt butter and add in the other ingredients.  Stir until the sugar is blended.  Add carrots and stir until they become glazed.


Roasted Fresh Vegetables


Red Potatoes

Bell Peppers


Lemon-Dill Salad Dressing

Cut vegetables in large pieces and pour dressing over them.  Put them in a pan and roast them in the oven or in foil on the grill.  This is an excellent way to use Muhammad Farms holistic vegetables.


Zucchini and Yellow Squash

Zucchini/Squash Quiche

3# Zucchini and/or yellow squash- washed and cut up

1# grated Cheese (cheddar, colby or others)

9 Eggs - beaten

1 cup Sour Cream or Mayonnaise

1 Med. Bell Pepper - chopped

1 Lg. Onion - chopped

2 Garlic Cloves - chopped

1 tbsp dried Basil

1 tbsp Lemon Pepper

2 tsp Salt

Makes 2 deep dish pies.

Cook zucchini in water until soft (drain. Liquid can be saved to flavor rice or other foods).  Add to drained zucchini, the grated cheese, beaten eggs, sour cream or mayonnaise and all the other ingredients. Mix well. In two pie crusts divide mixture and bake at 350 degrees until crust is browned and quiche is firm


Marinated Vegetables Salad

3 - Large Cucumbers - sliced

2 - Large Tomatoes - diced

1 - Med Bell Pepper - sliced

Marinade: 11/2 cups vinegar (apple cider or flavored), 1/2 cup Olive Oil, 3 tbsp Worcestershire Sauce, 3 tbsp sugar (raw or brown), 1 tbsp Mustard, 1 cup Water. Mix well and pour over vegetables. Chill and serve.
